How much salt should I use for curing and brining?

Curing and brining are processes used to infuse moisture and seasonings into meats, cheeses and various other foods. A basic brining solution consists of salt and water.

One method for assessing the amount of salt in water is to attempt to float an egg or potato in the solution. If it sinks, add more salt. Alternatively, you can purchase a salinometer to simplify the process and achieve more consistent results.

Why are my sausage skins splitting when cooking?

Sausage skins typically split apart because there is either too much water or too much fat in the sausage mix. Splitting can also occur when your skillet or BBQ is too hot.

What causes a vacuum machine to seal improperly?

If you have a food vacuum that is not sealing properly, there are a couple of different things that might be causing it. Of course, the machine itself could have a fault. If the machine is working properly, but your packages are still not sealing correctly, be sure that liquid or moisture is not getting sucked into the sealing area.

How should I care for my knives?

A quality kitchen knife can last for decades when properly cared for. Just wash the knife after use in hot, soapy water. And keep it sharp with a sharpening steel or sharpening stone. You may also use an electric knife sharpener.
